Pulao Recipe
Here’s a simple 5-step Pulao recipe:
- Prep the Rice
- Rinse 1.5 cups basmati rice until the water runs clear.
- Soak for 20–30 minutes, then drain.
- Sauté Whole Spices
- Heat 2–3 tbsp ghee or oil in a pot.
- Add: 1 bay leaf, 4–5 cloves, 1 small cinnamon stick, 2–3 cardamom pods, 1 tsp cumin.
- Let them splutter.
- Cook the Vegetables
- Add 1 sliced onion and sauté until light golden.
- Add mixed veggies (1 cup peas, carrots, beans, potatoes).
- Sauté for 2–3 minutes.
- Add 1 tsp ginger-garlic paste and cook briefly.
- Add Rice & Water
- Add the soaked rice and gently stir.
- Season with salt.
- Pour in 2.5–3 cups water (depending on rice type).
- Optional: add a few mint/coriander leaves.
- Cook & Rest
- Bring to a boil, then cover and cook on low for 12–15 minutes.
- Turn off heat and let it rest (covered) for 5 minutes.
- Fluff with a fork.
